Since we did a small renovation in our kitchen I was not in a position to bake with my oven toaster, because the pin socket doesn't match with the one in the wall.When there is no room for baking my minds was eager for it and its true i guess , one get more anxiety about a particular action when it is not possible for a certain period.Have anybody experienced it and I felt it more when I was not able to bake but now after I got my adaptor for it my enthuse for baking has dropped to null.This is the only cupcake I have baked so far and I pray my spirit for baking must increase.

HOw was your Pongal celebration and all we for the first time we celebrated in a traditional way since we came Chennai by making it in the upstairs of our apartment in earthern ware .We had our lunch in banana leaves which makes the food more healthy and delicious.I shared few pictures on social media and got great comments too.Coming to this recipe no one ate the sugar cane we bought for pongal celebration and so I made the juice for kids to drink it easily.During summer we can street vendors sell these juices plenty on road,but main problem in it is hygiene and the ice they use.So please make it fresh at home and drink.Here I have not used any fancy machine to extract the juice ,I just used my mixer.

When ever we travel down south Tamilnadu we make sure to buy some halwa at Tirunelveli.I referred Raks kitchen to do it with some slight changes.I needed the sugar & ghee amount.The tricky parts are the caramelisation ,then the addition of water and continuous stirring.If we miss it the halwa may turn bitter.

Pavakkai Theeyal | Bitter Gourd in roasted coconut -Tamarind gravy
Theeyal is nothing but a gravy/kuzhambu made with spices ,deeply roasted coconut and tamarind juice. Bitter melon is fried and added to this to make it bitter gourd theeyal. Frying the bitter gourd reduces the bitterness to a certain amount.I have added a small piece of jaggery to this gravy but you can omit it if you don't prefer sweetness.
