Kara chutney | Hotel style spicy chutney | Onion-tomato chutney
When it comes to side dish for idli/ dosa mostly I prefer easy sambar or coconut chutney or red chutney.But when the breakfast ,idli/dosa , is continous for next following days also I do this kara chutney or tomato chutney. Easy sambar | Pressure cooker radish sambar( video recipe)
Sambar is a one-dish which is quite common in many households in South India. Each one makes their way for sambar. Some cook dal and veggies separately then mix it and boil with sambar powder with tempering at last. I make that way when I use drumstick as a vegetable because it gets overcooked when done in a pressure cooker. Kadamba chutney with step by step pictures.
Kadamba chutney is a made with a mix of many ingredients which goes well for idli/dosa or any millet dosa. Have you seen flower vendors selling kadambam flowers which have a mix of different color flowers and in the same way this chutney also have a mix of different ingredients and hence may be the name( I don't know the exact reason for this chutney and it's my wild guess.) I served this for instant ragi dosa which I will share very soon. Let us see how to make this easy chutney.

Sambar with freshly prepared sambar powder.My mom always makes fresh small batch of sambar powder every time she makes sambar.I have never seen her buying sambar powder from the grocery shop.And the sambar she makes tastes divine and I miss them so badly as I only have memories of her as she left the world so early.For one dinner I want to try sambar as my mom do and I did it.I explained to my daughter how her granny cooks sambar with fresh masala and how tasty it would be.I feel sad that my kids have no chance to get the love and affection for thier granny.

Idli podi/gun powder comes as a saver when we are not in a mood to make any side dish for idli/dosa.It is unbeatable with some sesame oil.My kids are adherent lovers of this podi as they don't need any other side if this podi was there.I usually make this in a big batch and they stay fresh till last.The secret of it is dry roasting of the salt.If we do so this podi/powder won't spoil and till remain fresh.Do try this way and see.

Its easy to make idli/ dosa for breakfast and when making side for it if it happens to be sambar children complain of it so it sometimes becomes little tough for me to decide the side dish for it.When I bought few avocado I was left with one left which I was planning to make ice-cream but it doesn't happen ,So decided to end by making this chutney.Googled to get some knowledge of it and ended making the version suiting me.

Making sambar is not any difficult task just cook dal with veggies add in masala ,boil and tadka it.Every one will have thier own way of making sambar, some cook vegetables along with dal while some cook it separately and then add to cooked dal.I too have tried many different ways but this hotel sambar stand unique in taste,yes here i have used eastern sambar masala which gives an distinct flavor to it.When ever you see packets of this smabar masala don't forget to grab it as making sambar with it is so easy and tasty too.

Ginger which we know aid for digestion ,high in gingerol as substance high in anti-inflammatory and antioxidant property.Ginger can be used either in fresh or dried form.It cures stomach upsets,diarrhea,morning sickness nausea and vomiting after surgery, as well as loss of appetite.Try to add this ginger in any food in you meal either while cooking or while making any beverages.This chutney is one form of eating ,if don't like the aroma of ginger it will be difficult for you to eat this,in that case add little jaggery with it.

Beef Masala | Spicy Indian Beef Masala
Beef is our family favourite but i buy them very rare but at least once a month.It makes a best side for bread,aapam,idli/dosa,idiyappam,roti/chapathi and even rice yes its so versatile can use for any side.I use to buy a tender version(veal) of it.My mother makes the best beef curry but i am not lucky to eat more from here as she lives in our heart only,miss u amma.
