Mint has a unique flavour which really refreshes and only if people like this minty aroma can enjoy else please don't try this.At first i too had some query about how its going to be but when i made this it turned out yummy and delicious .Hence in my note better try once and then decide whether to proceed further or just stop with once.Here i have prepared this with cooked rice but if you prefer you cook rice with mint water and make it more tasty.In future i have decided to try that mint pulao and will blog about it when i do it.

serves-1 to 2
Ingredients:
- Cooked rice
- Mint leaves- from a bunch * see notes
- Green chilly- 2 r 3
- Lemon juice- from 1\2 lemon
- oil-2 tsp
- mustard-1\2 tsp
- channa dal-1 tsp
- cashew nuts-few
- salt to taste
How i made:
1.Clean the mint leaves well in water.Grind it to a coarse paste along with green chilly.Squeeze lemon juice to avoid discoloration.
2.Heat oil in a kadai pop out mustard seed followed by cashew nuts and channa dal.When it is fried a bit add the ground mint paste along with little water and salt.
3.Wait for few seconds then add the cooked rice and toss it well so that the mint paste get coated well .Switch off.
Aromatic mint rice is ready to eaten or packed for much box.
1.Here i have added only mint leaves but if you prefer you can add half mint and half coriander leaves.
The smell of this would be amazing... lovely recipe...
