We all know the health benefits of millets and i need not brief it again for you.They are high in fibre and low in carbohydrates and its best to use millets instead of rice in our diet.Last week for my kids lunch i packed rotis so that i can have millet for lunch.I made with 1\3 cup first the sadam/rice then diluted it with buttermilk and had the porridge.

Thinnai Adhirasam | Foxtail Millet Jaggery Sweet | Diwali Sweet

For this year Diwali recipe, I have decided to try some sweet and savories with millets. Let me see how for it goes smoothly and How many recipes I try. To begin with, I tried this adhirasam with thinnai arisi. I am a big fan of this adhirasam and hence I tried this first. Making this millet adhirasam is same as regular adhirasam only with the difference in millet in the place of rice. All the other procedure remains the same. I added more syrup into the flour. So the next day I couldn't make balls correctly. I resolved it by adding some wheat flour. So be careful not to add all the jaggery syrup.

Ragi/ finger millet is one for the healthiest millet which is very suitable for this summer season. Since it cools our body temperature one should have this millet in any form during summer. I usually make many south Indian breakfast recipe with it and you can check it by searching in the search box. Paniyaram can be made with idli/dosa batter but I want to make a batter especially for this paniyaram. So I decided to try this. Instant dosa comes as a savior when we don't find time to grind idli/dosa batter or when clueless what to be cooked for breakfast/dinner. As millet flour is used init this dosa happens to be a healthy one. As I mentioned in my previous post, Kadamba chutney, I served this dosa with that chutney. Here I have used ragi flour but I guess you can use any millet flour in a similar way to make this dosa. If I try with other flour sure I will write about it here.

Adai is rice- dal mix savory pancake. Here in addition to dal & rice I have also used a millet (Samai) to make it more healthy. Adai doesn't require any fermentation. You can make it right after grinding the batter just a resting time of 10-15minutes. Since this recipe is so heavy with dal& rice you will feel full with just one adai. Here I have used little millet but you can use other millet varieties also.

Foxtail millet idli is a healthy breakfast option in place of regular idli. I have tried idli with other millet, but in all, I have used some rice to make the batter. But in this millet idli I haven't used any rice and yet the idli turned soft. Some other idli recipes in my space include ragi instant idli, fermented ragi idli, kodo millet idli, etc.
