Tempered Tapioca | Kappa Thalichathu



I love tapioca/kappa very much.Whatever the form I can have it all day for three meals.Back in my native, we get a very good variety which has a different taste that of those we get here in Chennai.Some years back when we went to Kerala for a short trip we got some stem from my hubby's friend house and I planted it in sac on our terrace which yielded some amount of kappa.This December also I got some stem and have planted it.Good thing is that it has sprouted and new leaves have started shooting up.Will post pictures later.

Beetroot Dhokla with step by step pictures.With a variation from regular dhokla, I have added beetroot puree in it to make it an iron-rich snack.When I made the batter for dhokla it was in a pretty pink color but when I steamed it the color got vanished and it was as regular dhokla.When searched how to fix it got the idea from a site by adding beetroot juice to the tempering agent and pour over it.So if any of you are trying this dhokla be sure you add at least 1\2 cup of beetroot puree to the batter to get nice pink colored dhokla.

When I blogged about the kara kuzhambu using mochai I have mentioned about making a sundal with the leftover soaked beans and this it that recipe.Making sundal is quite easy just pressure cook the soaked beans, temper with spices and freshly grated coconut and serve hot.Not any fancy ingredients used to make sundal. But here in this sundal variety I slightly changed by adding an roasted spice powder to give a flavorful twist to the normal sundal.I googled many recipes, got some ideas from it and did this.Do try this version and I"m sure you will love it.

Today's recipe is a healthy vada with vazhaipoo/ banana flower. Banana flower is one vegetable which I had bought very very rare maybe once or twice before.Although knowing the goodness in it I avoid buying as I was damn sure my kids won't touch it.But If I make any fried snack with it then I was sure it goes well with them.Last week bought a box of peeled flowers from the big basket ( ordering for the first time) keep in mind to make vada with it.but my laziness didn't give time and mood to cook. Somehow I managed to make this healthy fritters for the snack on Tuesday.The difficult part is removing the long stigma in the middle of each flower.Then chopping & grinding are too simple.Here I didn't chop I just added to the dal and ground it.

My kids are fond of this soya granule aka soya chunks, Even if I just shallow fry for them there would be a fight between the two of it.At times I make vegan chicken 65/ soya 65 for their lunch box and many times curry with it for roti/ chapathi.
For a day dinner I planned to make the burger and for the patties, I thought to make it with this soya chunks.Since it easily gets soaked no prior planning for making these patties is needed.

Deep fried snacks and chai/tea in the evening are like matches made is heaven, yes it is an awesome combo and nothing else can be great like these two.I love trying different snacks for my hungry kids from school.Last Saturday while watching Vijay Tv's program of chef Venkatesh Butt ,samayal samayal I decided to make the dish for my kids in the week to follow.I prepared for it well in advance and fried them only after the come as I always wish to serve them hot and my kids to love it as what else joy can be for a mother like me than to see my children enjoying the food I make for them.I can handle any pain to see that joy in their faces.

Sudden change in weather from hot to mildly raining calls for some deep fried snack in the evening.Yes, the  temperature here in Chennai is too good with light showers now and then in days but some sure in nights.Something hot,deep fried  eatable is the best one for the evening snack.
Last week I bought some broccoli to make some lunch box rice recipes for my kids but I didn't so yesterday I decided to make this fritters for their after school snack.I was also left with some more florets for it which I prepared soup and added little in our dinner pasta, which I would share soon.

Cauliflower is one of the seasonal  vegetable which is grown from a seed.The white head part is alone eaten.Its one vegetable which has an array of nutrients including minerals,vitamins,antioxidants and other phytochemicals.For weight watcher's this vegetable comes in handy as its not a starchy vegetable and high in natural fibres.One can have it as a salad, soup, cooked with other vegetables or as pot meal where it is cooked with rice and spices.
One major issue while dealing with this flower is that it has minute germs or insects hidden inside the florets.So great care has to be taken to remove it before making any preparation by letting it to be in hot water for a few minutes. If these germs are not removed it may cause stomach upset/poisoning.
