Punjabi Samosa with step by step pictures.Samosa is a deep-fried snack where the outer coating is made with flour/maida and the inner filling will be mostly potatoes.Now with more innovation in recipes, people change the inner filling and make a different variation.
This is my second samosa recipe on my blog where the previous one with readymade pastry sheet and it was onion samosa which is one of the famous street food in Chennai.But in this samosa, I made the outer coating from starch.Let us see how to make this.
Preparation time:10 mins
Cooking time 30 mins
Serves: 2-3
Ingredients:
- Maida/flour- 1 &1\2 cup
- Ajwain/Ommam-1 Tsp
- Ghee-1 tbsp
- Salt to taste
- Oil- to deep fry
Inner filling:
- Potato-2
- Fresh green peas- 1\4 cup
- Oil- 2 tsp
- Jeera-1 tsp
- Onion-1,chopped
- Green chilly-1.chopped
- Ginger garlic paste- 1 tsp
- Red chilly powder-1\2 tsp
- Chat masala-1\2 tsp
- Turmeric powder-1\4 tsp
- Lemon juice from 1\2 lemon
- salt to taste
Method:
1.In a mixing bowl add flour, salt, ajwain, ghee and mix well.Then slowly add water and make a non-sticky dough.Make balls out of it and keep it covered.
2.Cook potato till done. Peel and mash it well.
3. Heat oil in a pan, pop out jeera followed by chopped onion, green chilly and ginger garlic paste. Saute well till the raw smell goes.
4.Then add mashed potato and fresh green peas.Add all dry masala and salt.Cook for some time it everything blends up well.Switch off and squeeze lemon juice.The filling is ready.
5.Take a ball of dough, roll it and cut into a semicircle.Fold each semi-circle in form of a cone and seal the ends with maida-water paste.
6.In to the cone fill the prepared filling, close and seal it.Do the same for all balls.
7.Heat oil and deep fry these prepared samosas till it turns golden brown.
Serve hot with ketchup or mint chutney.
