Carrot Halwa with step by step pictures.
I wanted to try this easy carrot halwa long before and post it as my 1000th post but somehow it didn't happen since that time this red carrot/Delhi carrot was not in season. I particularly was to try halwa using red carrot only. As now these carrots are in season and mainly the vendor where I buy my veggies had this carrot with no second thought I bought it to make this dessert.This halwa is so simple to make and taste delicious.For a change I tasted some of the halwa with a scoop of ice cream which was totally delectable, do give a try for a change.

Ingredients:
- Red carrot/Delhi carrot, grated- 1 cup ( heaped)
- Full-fat milk-2 cups
- Sugar-1\3 to 1\2 cup ( I used just 1\3 cup)
- Ghee-2 tbsp
- Saffron-generous pinch
- Cardamon-3, crushed or 1\2 tsp powder
- Pistachio
Method:
1. Clean the carrot, grate and measure it.
2. In a nonstick pan add the grated carrot and milk, mix well.
3.Heat it on low flame and keep stirring.The milk will boil up forming cream on the side. Scrap it and keep stirring till all the milk gets evaporated.It will take about 20-25 mins.
4..Add sugar, crushed cardamom, and saffron. The sugar will melt. Add ghee in tsp by tsp. At a stage, it will become thick. Add some chopped nuts.
5.Serve with more nuts added on top either warm or cold.
