This is an easy one pot meal which has both veg and non-veg.One can have it just like that or if any only add up some spice curries to make it spicy.Since it is mildly spiced it can be served for children for their lunch box.
Cooking time: 30-45 mins
Serves: 3-4
Ingredients:
Table 1:
- Basmathi rice-1 n 1\4 cup
- water-4-5 cups
Table:2
- Prawns-1\2 kg (after cleaning it was just 1\4 kg)
- oil-1 tbsp
- ginger,chopped-1 tsp
- garlic ,chopped-1 tsp
- Garam masala-1\2 tsp
- turmeric powder-1\4 tsp
- Red chilly powder-1\2 tsp
- Salt to taste
Other:
- Oil+ ghee-3 tsp ( or only oil)
- Whole spices-cloves,cinnamon,cardamon
- green chilly-finely chopped-1
- Vegetables(carrot,cabbage,beans& green peas)-1\2 cup ( i used fresh green peas)
- cilantro leaves-to garnish
- salt
Method:
1.Boil water and add the cleaned rice to it,when it is 3\4 cooked add in salt and drain the rice.
2.Heat oil in a non stick pan,add in chopped ginger & garlic ,saute for a while.then add in cleaned prawns and fry it well in that oil.Add in red chilly powder, garam, turmeric powder, masala powder, salt and saute for some time till it is cooked.Saute for 5-8 mins and switch off.( don't cook for long time as prawns become rubbery if over cooked).
3.Heat oil+ ghee ( or only oil) in a pan,add in whole spices ,saute for its aroma to release. Then add green chilly followed by vegetables one by one and fry it well till its is 3/4 cooked.(since the vegetables are finely chopped it get cooked easily). When done switch off.
4.Then to the cooked rice add in cooked prawns & vegetables and fluff it well with put breaking the rice.check for salt & add if needed.
5.Lastly add chopped coriander leaves and serve hot.
P.s. sorry for the picture is not so clear.
Note:1.Cabbage & beans must be chopped finely for it to be cooked fast.
2.If using dried peas soak it for 5-6 hours ,pressure cook it or microwave it and then add.
I really love fried rice and this looks scrumptious! Thank you so much for sharing. :)
