With onam ,state festival of Kerala fast approaching i decided to post few onam recipe this year.When i made jackfruit preserve/jam i first think i made was this appam and that too with oats and some millets.Its super easy ,healthy and can be made instantly.
preparation time: 10 mins
Cooking time: under 30 mins
Makes: around 12-15
Ingredients:
- Oats-1\2 cup
- Samai/little millet-1 tbsp(optional)
- Rice flour-1\3 cup
- jackfruit preserve/jam-1\4 cup
- jaggery-1\3 cup
- baking soda-1\2 tsp
- oil-as needed for making
- crushed cardamon-from 2
- salt -a pinch
Method:
1.Make a jaggery syrup with water till it get dissolved well.Switch off and filter for impurities.
2.Take jackfruit preserve in a bowl add some jaggery syrup to it and mix well.
3.Take oats,rice flour,crushed cardamon,salt and millet (if adding,just i added for crushy effect) and mix well.Add the mixed jaggery syrup to it and make a semi thick dough.Lastly add cooking soda and fold it.
4.Heat appam pan with some oil in each hole.Pour a ladle of batter in each hole and cook.When done on one side flip and cook the other side.
Tasty appam is ready.
Include this healthy appam in your onam menu .
P.S.One batch i burned a bit hence some appam are dark coloured in the picture.
Note:
1.Don't pour all the jaggery syrup in to the flour,add little by little and continue if needed.
2.For some crunchy effect i added some samai millet but can avoid or add rava/semoline.
3.It is not necessary to have this jack fruit preserve to make this you can even make it with fresh jack fruit.In that case just grind to coarse add to batter and make.
