Eggless Pumpkin Pancakes | Pumpkin Recipe | Easy Breakfast

 This pumpkin pancakes was in my do-to list for a long time and it came true yesterday.Yes , i tried this in small quantity for kids after school snack and it was super easy.I  made it with maida/plain flour but if you wish you can use wheat flour too.

preparation time: 15 mins
cooking time: 20 mins
makes; 6 pancakes

Ingredients:

  • flour/maida-1\2 cup
  • pumpkin puree-1\3 cup( see notes)
  • sugar-1\3 cup
  • water-1\3 to 1\2 cup
  • baking powder-1\2 tsp
  • cinnamon powder-1\4 tsp
  • dry ginger powder-1\8 tsp
  • nutmeg powder-1\8 tsp
  • bakin soda-a pinch
  • vanilla essence-1\4 tsp( optional)
  • butter/ghee-to cook

Method:

1.In a mixing bowl add in all in all dry ingredients and mix.Add in pumpkin puree and further mix.
add water slowly and mix well without any lumps.

2.Then add sugar ,essence and mix well till it dissolves.the batter should be not thin or to thick.


3.Heat a dosa tawa and pour a ladle of batter in it.Wait for it to cook on one side.add ghee/butter along sides.

4.When done on one side flip and cook the other side.Do the same for all the batter.


Serve hot with any syrup or as it is.



Notes:

1.For pumpkin puree,peel the outer skin of pumpkin,scoop the the center part & discard it.chop in to pieces,boil it with some water.When cooked cool and grind or mash it well.
