As i have said earlier i love kerala foods very much may be due to reason I was brought by near that state and this white stew is one of their dish which goes well with aapam,idiyappam.Lets see how to make this easy stew.
Preparation time: 10 mins
cooking time: 15 mins
Serves-2 to 3
Ingredients:
- Mixed vegetables- 1 to 1n1\2 cup( carrot,beans,green peas,potato)
- Thin coconut milk-1 cup
- Thick coconut milk-1\2 cup
- Oil-2 tsp
- cardamon,cinnamon,cloves- 1 each
- turmeric powder-1\4 tsp
- pepper-1 tsp( coarsely powdered)
- salt to taste
- curry leaves
To grind
- ginger-small piece
- Garlic-3 to4
- Green chilly-1 small
Method:
1.Chop all the vegetables in same size.Extract coconut milk and keep ready.( i used ready made coconut milk powder.In this case we have just mix in warm water and add it).Grind ginger,garlic and green chilly to a coarse paste.
2.Heat oil in a cooker/pan add the whole spices,saute then add the ground paste and saute till raw smell goes.then dump in the vegetables with salt ,pepper and turmeric powder.Add thin coconut milk and cook for 1 r 2 whistles.
3.After the steam is released open add the thick milk and cook just for it to boil and switch off.Add curry leaves.
Serve with aapam/ iddyappam.
Note:
1.For authentic kerala taste replace oil with coconut oil (or) add some coconut oil while switching off.
