For a long time i want to make bread but it should be healthier so decided to go with foxtail millet /thinnai flour bread.we had this healthy bread for breakfast as french toast.I am yet to bake my white bread.
Preparation time:15 mins
Resting time: 2 to 3 hrs
Baking time: 30-40 mins( may vary from oven to oven)
Ingredients:
Foxtail millet flour/ thinnai flour-1 cup + extra
Wheat flour-1 cup
Oats flour-1\4 cup (just powdered the instant oats in the mixer)
Milk powder- 1\4 cup
Instant yeast- 1 tbsp
Olive oil-1 \4 cup + if needed
Salt-1 tsp
sugar- 2 tsp
Warm water-as needed
milk- to brush on top
Method:
1.In a mixing bowl add all the dry ingredients,oil and mix well.Then slowly add warm water and make a sticky dough.keep the dough in an oiled vessel for it to double.
2.Then punch out air add flour if needed and keep it in the greased loaf pan fro double again.
3.After it has proofed well brush on top with milk and bake it in a pre heated oven for 30-40 mins till the top sounds hallow when tapped.
cool it well and slice it.
Enjoy with any spread or make toast and serve.
Note:
1.If using dry yeast first proof it and then use.
2.Baking time may vary from oven to oven.
