When one thinks of chat, the green and sweet chutney comes to our mind first,as we all prefer to have the chat with it alone. Its very easy to make, make it refrigerate it and use when needed. For longer shelf life keep it in the freezer.

Green chutney:
Ingredients:
- Mint- 1 cup (tightly packed)
- Coriander/cilantro -1\2 cup
- Green chilly- 2
- Ginger- small piece
- chat masala-1 tsp
- Lemon juice- few drops
- salt to taste
Method:
1.Clean mints leaves and coriander leaves well.
2.Grind everything in a mixer except lime juice with a small amount of water.
3.Transfer it to a bowl, squeeze lemon juice,mix well.
4.Transfer it to a clean container and refrigerate,use as needed.Use dry spoon.
Sweet chutney
Ingredients:
- Dates- 12-15 nos
- Tamarind- 1 tbsp (size)
- Jaggery-1 tbsp(optional)( i didn't use)
- Chat masala-1\2 tsp
- Red chilly powder-1 tsp
Method:
1.De seed dates and remove the fibre from tamarind.
2.Pressure cook dates and tamarind(separately inside a small container in the cooker) for 3 whistle with little water.( Alternatively you can also cook in open vessel.)
3.cool it and extract juice of tamarind.grind dates to fine paste.reserve the dates water don't waste.
4.Mix dates paste,tamarind juice and jaggery well(if using) and bring to boil.
5.Add red chilly powder,chat masala and stir till it reaches sauce consistency.Switch off.
Cool and store it.
Note:
1.If u prefer u can add 1\2 tsp of roasted cumin seeds powder in each chutney.
2.I didn't add jaggery as my dates were soo sweet.
