Past three days were terrible days for me as my son swallowed a coin and we all were worried.First we took x rays to confirm it ,then doctor adviced to give more bananas and water.By God's grace it came out yesterday night and a million thanks to God almighty.
Now coming to the recipe,i was looking to make some microwave baking and referred many,at last i decided to make almond cake,then thought to add some cocoa powder to it and make choc almond cake.The result was a soft moist almond loaf cake.
Ingredients:
- Flour- 1 cup
- Almond meal/flour- 3\4 cup (see notes)
- Powdered sugar-1 cup
- Butter/oil- 1\2 cup(i used canola oil)
- Milk- 1\2 cup( Increase little more if needed)
- Baking powder- 1 tsp
- Baking soda- 1\2 tsp
- Cocoa powder- 3 tsp
- Vanilla/almond essence- 1 tsp
Method:
1.sieve flour with baking powder and baking soda.Add almond powder and cocoa powder to it and mix well.
2.In a mixing bowl mix powdered sugar with oil,add the flour mix to it little by little and mix.If its difficult to mix add milk to it and mix it to dropping consistency.
3.Add a tsp of essence and mix well.
4.Grease oil/butter and dust flour in a microwave safe bowl(i used a loaf shaped MW plastic container).
5.Pour the cake mix to it and MW for 5 minutes at its high power.Let it stand for while and remove.Cool and demould.
For topping:
I prepared a chocolate sauce with butter,cocoa powder,sugar and maida.
Poured over it.
Decorated it with edible silver beads,chocolate sprinkles.
Note:
1.To make almond flour: blanch the almond pat dry or leave it to dry for a day.Powder it.
I had almond flakes,i just powder it and used here.
2.You can bake it in OTG.In that case bake for 25-30 mins at 180 deg C and check,if needed keep again fro 10 mins.
