Kalan is one dish which is served in the sadya meal which is nothing but yam/raw plantain  or both cooked in coconut-yogurt masala paste.It must cook carefully as curd/yogurt may tends to curdle.I prepared this today along with sambar which was so yummy.I slightly adopted the recipe from here.

Drumstick gravy is an easy kuzhambu that can be made quickly with minimal ingredients/ This goes well with hot steaming rice and also equally tastes better for idli/dosa. Here I have used coconut for volume. but you can avoid it if you need less quantity.

Fish Masala is nothing but where the fish is first slightly fried then a thick masala from fried spices is made in which the fried fish is added to absorb the flavors.For the first time We tried it in December and it was a super it and since then we had made it thrice.For this recipe I searched google and gathered ideas to make it.Actually the thought to make this would not have happened if my father had not asked,yes it my dad who asked for the masala and we (together with my husband) searched and prepared it.The ingredients may look bit lengthy but all things are sure in your pantry.When  you get some good fleshy fish do try to make this once and I assure you will make it again and again.

This kuzhambu is simple to make and taste delicious for hot steamed rice. The temperature here in Chennai is soaring high day by day and it becomes unbearable to cook in the heat. So I am opting for quick and easy lunch recipes like curd rice, lemon rice, rasam, etc. This mor curry comes in this category which can be prepared quickly. Here coconut is not used instead soaked dal is used to make the paste. Pair some papad or any fries to have a filling and satisfying meal.

Pepper Coriander Chicken | Green Chicken curry


Coriander chicken is a semi-thick gravy made with freshly prepared masala of coriander leaves, green chili. To make it richer and creamier I used some soaked cashews which enhanced the taste and flavor. There is definitely a difference in taste when the masalas are freshly prepared. Go ahead and try this and I'm damn sure you will love it. We paired it with fried rice. You can also serve it for Indian flatbread, appam, idiyappam or any rice variety.

Masoor dal fry is another simple and easiest recipe. This can be used as gravy for hot steaming rice and as a side dish for Indian flatbread. It nearly takes less time to cook this recipe and here I have used open pot method to cook my dal other it would be even quicker if I use a pressure cooker. Just cook the dal, temper it and you are done.

Mochai Kara Kuzlambu | Dry Field Beans Curry | Chettinad Kara Kuzlambu




Field Beans knows as " mochai" in Tamil is available in two form dry and fresh.To say the truth I never ever had mochai in my life time.Whenever I go for vegetable shopping  I have seen the vendor selling the fresh variety of it but never dare to buy it and try once. But when I hear dialogues in Tamil films conserving about " mochai kottai kuzhmabu", I immediately get tempted and my mouth salivate.To check for the taste of it I bought a pack of this dried beans long back in November last year  but didn't try any as blogging was bit dragging from my side during that time.At last two week before i tried this curry and tasted for the first time and it was like normal kuzhambu/ gravy with the cooked beans in it.The curry it was so filling with rice and you don't need any side dish for it. I have some left over from the soaked beans and thinking of doing sundal with it.

Drumstick Leaves -Dal Curry | Murungai Keerai Poricha Kuzhambu




I got a bunch of this super healthy green ," murungai keerai"  called as drumstick leaves in English to make a healthy breakfast ,adai, and I was left with more bunch of leaves.So while browsing I got attracted by this kuzhmabu and decided to go for it . I had a doubt how my kids will react to it and they didn't complain any and it was super delicious .I strongly suggest to try this.I did a slight variation by adding few garlic pods while grinding for easy digestion.

Pavakkai Theeyal | Bitter Gourd in roasted coconut -Tamarind gravy

Theeyal is nothing but a gravy/kuzhambu made with spices ,deeply roasted coconut and tamarind juice. Bitter melon is fried and added to this to make it bitter gourd theeyal. Frying the bitter gourd  reduces the bitterness to a certain amount.I have added a small piece of jaggery to this gravy but you can omit it if you don't prefer sweetness.

Making sambar is not any difficult task just cook dal with veggies add in masala ,boil and tadka it.Every one will have thier own way of making sambar, some cook vegetables along with dal while some cook it separately and then add to cooked dal.I too have tried many different ways but this hotel sambar stand unique in taste,yes here i have used eastern sambar masala which gives an distinct flavor to it.When ever you see packets of this smabar masala don't forget to grab it as making sambar with it is so easy and tasty too.

This is an easy kuzhambu/ gravy for rice made by first frying the onion vadagam and then making the spice-tamarind water to boil in it.It is tasty,spicy and little sweeter ( by the adding of jaggery) and taste great with hot steamed rice.It can also be used as side dish for idli/dosa.
