Coriander chicken is a semi-thick gravy made with freshly prepared masala of coriander leaves, green chili. To make it richer and creamier I used some soaked cashews which enhanced the taste and flavor. There is definitely a difference in taste when the masalas are freshly prepared. Go ahead and try this and I'm damn sure you will love it. We paired it with fried rice. You can also serve it for Indian flatbread, appam, idiyappam or any rice variety.

Ingredients:
- Chicken- 1/2 kg
- Oil-2 tbsp
- Cinnamon-1 stick
- Bay leaf-1
- Onion- 1, big, thinly sliced
- Green chilli-1
- Ginger garlic paste-2 tsp
- Tomato-1
- Coriander powder-2 Tsp
- Turmeric powder-1/2 tsp
- Garama masala-1 tsp
- Salt to taste
To grind:
- Cashew-5
- Green chilli-5
- Coriander leaves-1/2 cup
- whole pepper-1 tsp
- Garlic pods-4
Instructions:
1.Clean chicken well. Marinate with ginger garlic paste for some time.
2. Soak cashew nuts in water. THen grind it along with all ingredients under " to grind" into fine paste with some water.
3. Heat oil a thick bottomed pan( I used just my cooker). Add cinnamon & bay leaf and wait for the flavor to emerge. THen add onion, green chilly and saute till onion becomes translucent.
4. Add the marinated chicken along with the juices init. Add turmeric powder, coriander powder, garam masala , pureed tomato and mix well.
5. Then add the ground paste, salt. Add some water and cook in low flame till done.
Garnish with coriander leaves and serve.
