Kovakai Poriyal | Tindora Stir fry


Kovakai/ Tindora is one vegetable which I got familiar only after we shifted to Chennai. I had tasted it in my sister in law's house in Andhra and she said it is good for the diabetic. I don't remember that I had about this vegetable before 2k. You can make many recipes with it and many time just I cut into round shaped, mix with spices and pan fry in just a tbsp of oil.



This poriyal can be made in just a few minutes and the time-consuming part it chopping the vegetable. To enrich the flavor and taste grated coconut can be added in the end. But here I have not used.

Ingredients:


  • Kovakai-1/4 kg
  • Oil-2 tsp
  • Mustard-1/2 tsp
  • Jeera-1/4 tsp
  • Garlic pod-1. chopped
  • onion-1. finely chopped
  • Green chilly-1
  • Turmeric powder-1/2 tsp
  • Salt to taste
  • Grated coconut -1/4 cup (optional) (I have not used here)
  • Curry leaves-few


Instructions:

1. Clean the vegetable well, trim its ends and cut into thin slices.

2. Heat oil in a pan, crack mustard, jeera. Add onion, chilli, garlic, curry leaves and saute well.


3.THen add sliced vegetable, turmeric powder, salt. Mix well. Cover and cook in low flame for 2 mins.


4. Open, add grated coconut and switch off.

Tasty poriyal ready to be served with rice.


Note:

1. This dish tastes good in both way, with and without coconut.
