Mango is a super delicious fruit who will say no to this lovely yellow king of fruit.
Some mangoes were lying on my fridge for some time, I decided to make something with it and make it muffins,though I am a non-veg I love to bake eggless version very much.
Ingredients:
- Flour- 3\4th cup
- Atta/wheat flour-3\4 cup
- Powdered sugar- 1 cup
- Mango pulp- 3\4th cup
- Baking powder- 1 tsp
- Baking soda- 1\2 tsp
- Curd- 2 tbsp.
- Melted butter/oil- 1\2 cup
- Flax seed powder- 1 tbsp.
- Warm water- 2 tbsp.
- Dash of vanilla.
Method:
1.Sieve both flours with baking powder and baking soda well.
2.Mix flax seed powder in warm water and keep aside.Pre heat the oven.
3.In a mixing bowl,beat melted butter with powdered sugar,add in mango pulp,curd .flax liquid and mix it.
4.Now fold in dry ingredients slowly and gently mix,if its hard to mix add very little milk(I did not add).Don't over mix the batter.the result may be a hard muffin.
5.Lastly add some vanilla essence and mix it.
6.Pour the cake batter into the greased or lined muffin pans.
7.Bake it for 20-25 mins at 180C deg.
8.Cool it on wire rack and enjoy it.
Note:
1.I usually powder the sugar for quick mixing.
2.Don't pour the batter to the full level,just pour it till 3\4th.
3.You can do any frosting on the top.
