Masala Vadai(Vada) | Lentils Fritters


Some hot vadai with a cup of chai/tea in evening  what a great combo -nothing will beat.My hubby loves all vadai variety but he wants everything to be hot,hot from stove.After marriage i too got used it and even kids following the same.Now to this recipe everyone may have their own version,here is mine.



Soaking time-2 hrs
Cooking time-30 mins

Ingredients:


  • channa dal/kadalai paruppu-1 cup
  • Onion-1
  • Green chilly-1 finely chopped
  • Red chilly-3-4
  • Ginger-a big piece
  • Fennel seeds- 1 tsp
  • Salt to taste
  • curry leaves
  • oil to deep fry them


How i made:

1.Soak channa dal with red chilly for 2 hrs.

2.Drain water and return the dal with red chilly to a mixer and grind it to a coarse paste with some whole dal here and there.Transfer to a bowl.(don't add water)

3.Finely chop the onions ,green chilly ,ginger and curry leaves ,add it to the mix.

4.Add salt and fennel seeds mix well.

5.Take small lemon size of it press it to from patties with ur palm and drop it on hot oil.
  do the same for all vadai batter.

6.Fry them till it becomes golden brown colour by flipping between.Drain the excess oil  and serve hot.



note:

1.Add chilly level according to ur spice level.
2.If u think u need to add water to the batter just add some onion pieces and grind with it.Don't add water.
3.Some will add rava/raw rice for extra crispness but it didn't .
