Its pouring in chennai since night and its a rain holiday today.Thank God for the rain and it must rain the most to fill all lakes and reservoir .since there was no rain last year serious water problem exist this year so we shall pray for good rain this monsoon.Coming to the recipe last week one evening my daughter asked for it ,i kept pending posting it think today is the right day as its raining.Its so easy to make try it.
Ingredients:
Prep. time-10 mins,cooking time-15 mins
Serves-2-3
- Mixed vegetables- 1 cup(carrot,beans,cabbage) i used this 3 only
- Water-3-4 cups
- garlic 1 r 2 pods else ginger a small piece
- turmeric powder-a pinch
- Corn flour-2 tsp
- salt to taste
- pepper powder-3 tsp or as needed
- small murruku/any fried savoury item-for topping (optional)
Method:
1.Cut all the vegetables in to small pieces.Take a pressure cooker add them with 3 cups of water and a pinch of turmeric.Pressure cook it for 2-3 whistle.
2.After the pressure is released open and mash it well with a wooden ladle.Mix corn flour with some water and pour in to it with salt and allow it to boil.
3.Keep stirring as it will becomes thick soon.When it reaches semi thick consistency switch it off.Add some chopped cilantro/coriander leaves and pepper powder to it.
Serve hot.
We like to serve it with some murruku,its purely optional.
Note:
1.Since i didn't have spring onions in hand i did not add,if u have pls add it.
2.You can even cauliflower,green peas its up to ur choice.
