Julekake - Norwegian Christmas Bread | Eggless Baking challenge


For the march month challenge for eggless baking group, priya of enveetu kitchen suggested to go for this Norwegian Christmas bread.The original recipe goes for candid citron but i replaced it with some tutti fruity and candid orange peel.




preparation time: under 30 mins
Resting time: 2-3 hrs
Baking time: 20-30 mins

Ingredients:


  • Flour/maida-1 cup
  • wheat flour-1 cup
  • Instant yeast-2 tsp
  • milk-1\3 cup
  • plain vinegar-1tbsp
  • sugar-1\3 cup
  • butter + oil- 1\4 cup
  • cinnamon powder-1 tsp
  • raisins,candied peels,tutti-fruity-1\4 cup
  • Warm water
  • milk-to brush on top
  • salt a pinch

Method:

1.Add milk and vinegar together for it to curdle.In a few minutes it will look like curd.You can replace  with yogurt(curd).

2.In bowl add melted butter,oil,instant yeast curdled milk,sugar,salt and mix .Then add raisins,candid peels and tutti fruity.


3.Fold in both flour and knead to a soft pliable dough.Add warm water it needed.Cover it and let it doubles in volume.

4.After it has raised punch down the air and shape it in form of a round mass in a greased baking tray for it to raise again.

5.when it has raised again brush on top with milk and bake it in a pre heated oven for 20-30 mins at 180 deg C till the top becomes brown..


Cool it on wire rack and cut.



Note:

1,Baking time may from oven to oven.After 20 mins first check and keep if it has not done.If u feel its over browning cover with aluminium foil and bake.

2.If using dry yeast first proof it and then add.

3.Cool it well before cutting.Also grease well the baking tray or line with baking paper as mine got stucked in it( since i didn't grease well) better to line it with butter paper/ aluminium foil.
