Mint-Coriander Rice | Easy Lunch Box Ideas


Mint coriander rice with step by step pictures.
Packing lunch box for kids is quite challenging. Mostly I make lemon rice, simple fried rice, beetroot rice or mix cooked rice with the stir fry I make. Recently when I make this mint-coriander rice my kids loved them and hence decided to blog about it.

Ingredients:


  • Mint leaves-1/2 cup
  • Coriander leaves-1/2 cup
  • Green chilly- 1 or 2
  • Coconut pieces-1/3 cup
  • Garlic pods-2
  • Ghee or oil-1 tbsp
  • Shahi jeera or fennel seeds-1/2 tsp
  • Cashew nuts- few
  • onion-1, chopped
  • Salt to taste
  • Cooked rice



Instructions:

1. Clean both leaves well.

2.Grind mint, coriander, green chili, coconut, garlic and to a coarse paste form with little water.


3. Heat a pan with ghee or oil. add shahi jeera or fennel seeds and cashew nuts. Then add chopped onions and saute.

4. Add the ground paste, salt and sprinkle very little water and saute for a while.

5. Add the cooked rice, toss it up well in the masala and switch off.


Pack for lunch box or serve.
