Banana Oats Muffins | Breakfast Muffins



Oats is one great ingredient rich in iron and other vital nutrients.People opting for diet go for this grain as it helps in weight management.Here this muffin I have added the powdered form of it in addition to the flour to make it healthy.Together with banana and egg, this muffin makes a perfect breakfast option.

Baking time: 15-20 mins
Makes  6 big muffins

Ingredients:

  • Wheat flour-1\2 cup
  • Broken rolled oats -1\2 cup ( measured and I just powdered it)
  • Granulated sugar-1\2 cup
  • Egg-1
  • Vanilla essence-1 tsp
  • Banana-1
  • Curd/yogurt-1 tbsp
  • Oil-1\3 cup
  • Baking powder-1 tsp
  • Baking soda-1\4 tsp 
  • Almond slices-for topping

Method:

1.Powder the oats in a dry mixer.

2.In a mixing bowl mash the banana well.Add in sugar, oil and whisk it well.Break open an egg ,essence and whisk well.

3.Add powdered oats, wheat flour, baking powder and baking soda.Fold it well.Add in yogurt and whisk well for form a dropping consistency batter.

4.Line the muffin pan and scoop out the batter in it.Top with some almond slices.


5.Bake it in a preheated oven for 15-20mins at 180 deg C.or till done.

6.Cool and serve.

Notes:

1.Baking time varies from oven to oven.

2.Topping can be of your choice.

3.You can also use instant oats.
