I brought two banana leaves made vadam ( recipe soon )using one and was left with one ,was wandering what to do ended up make this appam.This calls for jack fruit jam/preserve since i did not have that made my own.
Preparation time: under 30 mins(excluding soaking time)
cooking time:15 mins
makes 6-8 appam
Ingredients:
Filling:
- Grated coconut-1\2 cup
- grated jaggery-1\2 cup
- elachi/cardamon-2
- Ghee-1 tsp
Outer coating:
- raw rice-1 cup
- salt
Others:
Banana leaves
Method:
outer coating and preparing banana leaves:
1.Soak rice in water for 2 hrs and grind it to a fine paste with little water.Mix salt and keep ready.The batter should not be too runny.
2.Cut the leaves to desired length.clean it and just keep it over the flame to just toss it.
filling:
1.Heat ghee in a pan add crushed cardamon,then add grated coconut and jaggery.
2.Saute till everything combine and becomes together.Now ur filling is ready.
How to proceed:
1.Take a leaf,spread little ghee on it.spread a ladle of batter like u spread for dosai.Place a spoon full of filling on it and close it as shown in the picture.Keep the closed leaves in the steamer/idli cooker.
2.Do the the same for all the batter and filling.
3.Steam it till done.Remove when done and serve delicious appam.
Note:
1.Jack fruit jam is used for original recipe ,use it if u have.
2.you can also make without tossing the leaves.
3.Filling can be ur choice,u can go for dry fruits ,tutti fruity,dessicated coconut,etc.
