Eggplant/ Brinjal aren't nutrition powerhouse but has certain amount of potassium,folate,copper,niacin and many vitamins.As its has low calorie content make an excellent choice for weight management people.
This recipe is very easy to make,try it out.

Ingredients:
- Bringal/eggplant-4 to 5
- big onion-1
- tomato-1 medium sized
- Green chilly-1,chopped
- turmeric powder-1\2 tsp
- Red chilly powder-1 tsp
- jeera powder-1\2 tsp
- salt to taste
- oil-2 tsp
- mustard-1 tsp
- curry leaves-few
Method:
1.Clean and cut bringal into small pieces and immerse it in water till cooked.
2.Heat oil in a pan,pop out mustard ,add in onion,green chilly and curry leaves and saute till onion becomes translucent.
3.Then add in chopped tomato and bringal/eggplant and saute.add all the dry powders with salt and cook for a while.
4.Cover and cook till the raw smell goes and switch off.
Serve as side for rice with any sambar/mor kuzhambu.
