I think aapam must be everyone favourite same here too we too love it more.I love to eat it with any sweet side dish but my daughter need spicy version so i have to prepare different food for her. This stew is my version of making, usually vegetable stew for aapam will be white but here i added some spice powder.
Ingredients:
- chopped vegetables-1 1\2 cup(carrot,beans,potato,green peas)
- Onion-1,sliced
- Tomato-1
- Green chilly-3 big
- Ginger garlic paste-1 tsp
- garam masala-1\2 tsp
- Coriander powder-1 tsp(optional)
- Coconut milk thin-1 cup
- coconut milk thick-1\2 up
- Turmeric powder-1\4 tsp
- salt to taste
- Oil-2 tsp
Method:
1.chop everything and keep ready.I ground tomato and 2 green chilly to a fine paste.
2.Heat oil in a cooker, saute onion and green chilly till translucent, followed by ginger garlic paste.
3.After the raw smell vanishes add the ground paste, saute.then add in all powder with salt.Add the thin coconut milk and pressure cook for 2 whistle.
4.Open the cooker add the thick milk and keep in flame for few minutes and switch off.
Tasty and easy stew ready for aapam. You can even have it for nan/chapathi.
Note:
1.If using dried peas soak it over night and use.You can also use fresh peas.
2.I have not used potato here but u can use it.

This stew looks very creamy and yumm. Usually masalas are not added and this version is also nice. Will try this next time.
