Beetroot is one of the vegetable which can be eaten as raw or cooked.Rich in fibre and anti oxidants this helps to lower the blood pressure apart form this it reduces bad cholesterol,helps relieve fatigue,etc.This vegetables can be used by all age groups of people.My daughter loves this vegetable and i often make pachadi with it and sometimes just a stir fry which will tasty and easy.Packing lunch box for kids are quite challenging since it must be tasty,appealing and the child must finish it fully.Lasty week my daughter asked for this rice and i made it,both my kids liked it.Its so simple just make a stir fry and mix the cooked rice in it.

Sweet Corn Capsicum sandwich | Easy Lunch Box Ideas
My kids started to love sandwich for breakfast/dinner and me to enjoying to make variety in it.When i got a pack of fresh sweet corn kernels it decided to do this sandwich for them which was a super doper hit.Here i have used only green colour capsicum to make more colourful use all colour if available in your pantry.

Carrot Rice | Easy LunchBox Ideas | Left Over Rice Recipe
Schools have reopened after summer holidays, mummies will be little worrying what to cook for the kids ,for me to the same.I have toddler who is having full working from this academic year,i was little worried about his lunch,how he is going to eat, but to my surprise he likes what I am giving him for lunch finishes it off. This rice is also one among it, I gave him. Try out this easy,tasty rice.

Baby corn pulao
Ingredients
1.Basmathi rice- 1 cup
2.water- 2 cup
3.baby corn- 5 to 6
4.ghee- 2 tsp
5.oil- 2 tsp
6.cashew- 2 tsp
7.garam masala- 1 tsp
8.salt to taste
Method:
1.Wash rice & soak for 30 min.cit baby corn.
2.Roast cashew in ghee& keep aside.
3.In the same kadai add remaining ghee & oil.add baby corn and saute little.then add garam masala& salt.
4.Add 2 cup water ,close kadai & bring to boil.
5.When it starts to boil,add the drained rice&close.
6.in about 5 -8 min it will be three forth cooked.Open & see.Then place a dosa tawa on the flame& on above that u keep ur rice kadai(with lid)to cook for remaining( this is what called dhumm).
7.check every 3 min.,it will be ready soon.
U may also add mint r coriander's leaf if u prefer.

Lemon Rice | Lunch Box -video recipe
Lemon rice is one of the most wanted lunch box recipes my kids.My daughter & son love it the most and prefer it mostly for their lunch.In a week at least for two days their lunch would be this simple rice.Some add lemon juice after taking it from heat but I add it when on heat and doesn't find any difference I have heard it would taste sour when we add while cooking. Potato roast is the best combo for it.
