Hakka Egg -Vegetable Noodles


My children love noodles , even if i give it for all three times  for meal they will happily eat it.Yes it is always welcomed in my house i think probably almost all kids love it.I buy instant 2 minutes noodles sometimes and plain one more often as i can add loads of veggies to it.Two days before i made this for dinner.It was more filling  and yummy .


Ingredients:


  • Hakka noddles packet-1 (mine was 250 gms packet)
  • Olive oil-1 tbsp
  • Chopped garlic- 2 tsp
  • Cabbage-100 gms
  • Capsicum-1 cup( all three colours)
  • Carrot-1
  • Beans-4 to 5
  • egg-2
  • pepper powder- 2 tsp(adjust)
  • Soya sauce-2 tsp
  • tomato sauce-1 tsp
  • green chilly sauce-1 tsp
  • Spring onion
  • Salt to taste






Method:

1.Cut all vegetables and keep ready.finely chop garlic and onion part of spring onions.


2.Boil water and cook the hakka noddles.add a tsp oil and drain it under tap water in a colander.

3.Heat oil in a pan,saute chopped garlic and onion of spring onion well. Then add in the vegetables one by one and saute till it is hale cooked.Add in little salt


4.Then add all sauces and saute for a while.Meanwhile heat another pan with a tsp of oil break two eggs in to it ,add little salt & pepper powder.Scramble and keep it ready.

5.Add the cooked noodles to the sauteed vegetables and toss it well.Check for salt.Lastly add the scrambled egg and  spring onions ,mix well.


Serve hot.
