Today is my daughter's birthday and I have planned to make a butterscotch cake for her.Since my son had Madras eye and in leave me too having cold ,not in mood to cook or blog.But i don't want my space to be idle so goes with my drafted recipes.Halloween is not much celebrated here in India but i want to try a cup cake with this pumpkin and hence this recipe.
Ingredients:
- Flour- 1 cup
- Pumpkin-1\2 cup,diced
- sugar-3\4 cup(mix of brown & white sugar)
- Cinnamon powder-1\2 tsp
- dry ginger powder-1\4 tsp
- Oil-1\2 cup
- water-1\4 cup
- Baking powder-1 tsp
- Baking soda-1\2 tsp
- Choco chip-1\3 cup + to sprinkle on top
- vanilla essence-1 tsp
Method:
1.Mix all the dry ingredients.(flour,baking powder,baking soda,cinnamon powder and ginger powder).Cook the pumpkin well in water and mash/blend it and keep ready.
2.In a bowl add in both sugar,oil ,essence and water.mix well till sugar is dissolved.Slowly add in the dry ingredients and mix well.Lastly add the pumpkin puree and give a good mix.
3.Fold in 1\3 cup of choco chip in to the dough.Scoop the batter in a muffin baking tray.sprinkle some choco chips on top.
4.Bake it in a pre heated oven at 180 deg C for 15-20 mins till a tooth pick inserted comes out clean.
Cool it in wire racks and serve.
Note:
1.Baking time vary from oven to oven.
