Diwali is just round the corner which we can easily witness in this digital world where bloggers posting more sweets and savories.I too have posted few of it and to add in it comes this burfi.I referred my coconut burfi and did it, as it is so simple to make.Just mix everything in a pan and keep stirring till it leaves the sides.One small suggestion from my side is to reduce the sugar level a bit.Because 2 cups looks more sweet for me after I made it so better reduce it to 1 &3\4 cup.But If you like more sweeter version then can go for 2 cups.

Ingredients:
- Grated coconut-1 cup
- Grated carrot-1cup
- Sugar- 2 cups ( see notes)
- Ghee-1 tbsp + 1 tsp for greasing
- Cardamom powder-1\2 tsp

Method
1.Heat ghee in a pan.Grease a plate and keep ready.
2.Add in grated coconut and carrot into the pan.Saute for a while till the raw smell vanishes.
3.Add in sugar and cardamom powder.keep stirring.
4.Then sugar will melt.Keep on stirring till it leaves the sides of the pan.
5.Transfer immediately into the greased plate.Draw lines when it is still hot.
6.Cut and remove the pieces when it is cooled well.
Super easy burfi is ready to relish.
Notes
1. I felt it is too sweet so you can reduce from 2 cups to 1 &3/4 cup or 1 &1\2 cup.
2.Do the whole process in low to medium heat.
3.Keep the greased plate ready.
