Kuska biryani is nothing but a plain biryani without any vegetables or meat.Since yesterday was Sunday mostly non-veg at home I want to try a biryani without any stuff.Long back I remembered this name "Kuska" so I googled and made this plain biryani yesterday.Onion raitha will be best pair for it.But i made mutton masala for it.
Preparation time: 10 mins
cooking time: 15 mins
serves: 2 to 3
Ingredients:
- Basmathi rice-1 cup
- Oil/ghee-2 tbsp
- Cinnamon,cardamon,cloves,bay leaf-each 1 r 2 each
- Ginger garlic paste-1 tsp
- Chopped onions-2
- Green chilly-2,slited
- tomato-1 big,chopped
- Corainder & mint leaves-a hand full
- Turmeric powder-1\4 tsp
- Red chilly powder-1 tsp
- coriander powder-1 tsp
- Garam masala-1\2 tsp
- Salt to taste
- Coconut milk-1 cup
- Water-1 cup
Method:
1.Clean the rice and soak in water.
2.Heat oil/ghee in a thick bottom pan.Add in the whole spices wait for nice aroma to come.Then add onion an green chilly.Saute well.
3.Then add in ginger garlic paste ,saute til raw smell goes.Then add chopped tomato cook till it becomes mushy.Add mint and coriander leaves.
4.Then add in all dry ingredients,mix well.Add coconut milk+water.Wait for it to boil.When it boils add the soaked rice.(drain the water completely).Cover and cook in low flame till done.
5.When the rice is half cooked keep in dum and cook.
When done fluffy it with fork.
Serve with simple onion raitha or any favourite gravy.
Note:
1.I used pan for making this.You can use pressure cooker also.In that case keep for 3-4 whistles.
2.I used here 1\2 water and 1\2 coconut milk.You can use either both or any one.Its your choice.
