Yellow Pumpkin Dal Curry | Yellow Pumpkin Kootu


Yellow pumpkin kootu with step by step pictures. Yellow pumpkin is one vegetable which I rarely buy but I often get tempted by its all in the vegetable shop thinking about making halwa with it which never happened till date.When I buy it I would either make simple pumpkin kootu/Erissery without dal or add it to sambar to make hotel style sambar.




The same story happened this time too when I bought it dreaming of making halwa but didn't and ended up making this dal curry with moong dal.The sweetness of this pumpkin, heat from red chilly and milky from the coconut make this a balanced, healthy dish for hot steamed rice.

Ingredients:
  • Yellow pumpkin- 1 cup (peeled and diced)
  • Split moong dal-1\3 cup
  • Salt to taste
  • Turmeric powder-1\2 tsp
  • Chopped coriander leaves


To grind:
  • Coconut pieces-1\2 cup
  • Red chilly- 5
  • Jeera-1\2 tsp
  • Garlic pods-4


To temper:
  • Coconut oil-2 Tsp
  • Mustard-1 tsp
  • Red chilly-1
  • Curry leaves


Method:

1.Chop the thick outer skin and the inner fleshy part around the seeds and discard it.Cube pumpkin into cubes.

2.Cook pumpkin and dal together till done.


3.Meanwhile, grind the ingredients under "to grind" into a coarse form.

4.Add the ground paste, salt, turmeric to the cooked mix.Add little water allow it to cook for a while and switch off.

5.Temper with the ingredients and add to it.


6.Garnish with coriander leaves and serve for rice.



Note:

1.You can use any dal variety like masoor or tur dal.

2.Adjust red chilly.
