Today's recipe is one of the most widely seen dish in Kerala.Mostly people there would grow all sorts of vegetables for their cooking in their backyard and make fresh curries daily with it.When I see such houses I feel more jealousy for having big area to grow plants. .To control my envy of it I just started growing a very few of it in my terrace,hope it gives me good result.If so I will share pictures.
On major difficulty in making this curry is cutting the jackfruit ,mainly while cutting the outer thorns.I really got fed up to do it then somehow I managed it.Apply coconut oil generously on knife and hand inorder not get stuck with the gum from it.
preparation time: 30 minutes ( includes cutting the raw fruit.)
Cooking time: under 30 mins
serves: 4-5
Ingredients:
- Small raw jackfruit-1
- turmeric powder-1\2 tsp
- Oil-2 tbsp (preferably coconut oil)
- mustard seed- 1 tsp
- onion-1 small,chopped
- red chilly-1
- curry leaves -few
- salt to taste
To grind :
- grated coconut-from 1\2 coconut
- shallots/small onion-3
- green chilly-3 r 4
- jeera seeds-1 tsp
- Turmeric powder-1 tsp
Method:
1.Apply coconut oil in hands and knife.Place the fruit over paper or board.Cut in to half and the cut the outer thorny green portion.Cut further into small pieces.Immerse it into water to avoid discoloration.
2.Cook these cubed pieces in plenty of water with some turmeric till it si cooked well.Drain and allow to cool a bit.Either blend it or using a heavy object gently strike over it.else you can also chop it.
3.Grind the ingredients given under "to grind" ( i forgot to add turmeric powder while grinding) in to a coarse paste.
4.Heat oil in a kadai. pop out mustard seed,red chilly, followed by onion and curry leaves.THen add in raw jack fruit pieces and ground masala.Mix well.Add in salt.Just srpinke water ,cover and cook for few minutes.Lastly drizzle some coconut oil over it and switch off.
Serve as side for rice.
