When i had a pineapple i want try a different recipe and came across this which is a combo of sweet,sour and spicy.With the grounded coconut added to it along with coconut oil used for tempering makes this dish to have flavors of kerala.One can just have this with hot steaming rice and curd/yogurt or rasam.
Preperation time: 10 mins
cooking time: 15mins
Ingredients:
- Pineapple-from 1\2 pineapple (peeled,cubed)
- Red chilly powder- 2tsp
- Turmeric powder-1\2 tsp
- salt to taste
to grind:
- Grated coconut-around 1 cup (loosely packed)
- jeera/cumin seeds-1 tsp
To temper:
- coconut oil-2 tsp
- mustard seed-1\2 tsp
- curry leaves
- red chilly-1
Method:
1.Peel and chop pineapple in to small cubes.Add enough water and cook it with chilly & turmeric powder .Mean while grind coconut and jeera seeds in to a coarse paste.
2.When the pineapple is cooked and the water has all evaporated add the ground paste and salt.Cook for few minutes for it to blend well and switch off.
3.Heat a tadka pan with coconut oil and other ingredients and pour over it.
Serve as side dish for hot steamed rice.
