Shahi paneer(Indian Cottage Cheese) is a very rich tomato based gravy which is very famous in North India.The name "shahi" means royal ( very rich).Yes, this gravy is rich with cashew nuts, cream & saffron. You can find many north Indian recipes rich with saffron , cashew nuts or badam.preparation time:10 mins

Serves:2 to 3
Ingredients:
- Paneer (Indian cottage cheese)- 1 packet(200gms Pack)
- Onion-1 big
- Tomato-1 big
- Cashew nuts-10 to 12
- Oil-1 tbsp
- Jeera/shahi jeera- 1 tsp
- ginger garlic paste-1\2 tsp
- Red chilly powder- 1 tsp(adjust)
- Turmeric powder-1\2 tsp
- garam masala-1\2 tsp
- Saffron-few strands
- Salt to taste
- Cream-1\4 cup ( i used milk here)
- cilantro leaves-to garnish
Method:
1.Cook cubed onion,tomato & cashew in 1 cup of water.when done peel the skin of tomato,cool a bit and grind to fine paste.Clean paneer, cut and keep ready.
2.Heat oil in a pan,add jeera or shahi jeera followed by the pureed tomato-onion paste ,cook for a while.Then add ginger garlic paste,saute till raw smell goes.
3.Then add in all dry powders and salt.Check the consistency you want and add water accordingly.then add paneer cubes and cook till everything blends well.
4.Lastly add cream or milk with few strands of saffron , wait for few minutes and switch off.
Garnish with coriander leaves and serve for rice /Indian flat bread.
Note;
1.If you don't have shahi jeera just add normal jeera.
2.For low-fat option I added milk if you feel it to more royal then go with cream.
