Sweet potato with the spiced blends in to it gives a delicious taste and this was our yesterday snack.Do try this as sweet potato is in season now.
Preparation time:10 mins
Baking time:20 mins
Ingredients:
- Flour-1 cup
- Sweet potato-1\2 cup(cooked & mashed well)
- cinnamon powder-1\4 tsp
- nutmeg powder-1\4 tsp
- ginger powder-1\4 tsp
- baking powder-1 tsp
- Granulate sugar-1\3 cup
- Flavourless oil-1\3 cup( i used canola oil)
- milk-1\3 cup
- Mixed nuts & fry fruits-1\4 cup
Method:
1.Cook sweet potato,peel the skin ,mash it well , measure and keep.Sieve flour with all powder well.
2.Mix oil and sugar well.Add in mashed sweet potato and whisk well.
3.Slowly add in the dry ingredients.If it is difficult to mix milk side by and mix well.Lastly blends in dry fruits& nuts.
4.Scoop it in a lined muffin pan and bake it in a pre heated oven for 20mins at 180 deg C or till a tooth pick inserted comes out clean.
Cool in wire rack and serve .
