Sago/Sabudana fritters is one of the snack of north Indian,which is a filling snack and make best pair with a hot cup of chai/tea of coffee.
Ingredients:
Sago/sabudana- 1 cup
Potato-1 big
Onion-1 medium ,chopped finely.
Green chilly-1 r 2(chopped well)
Cumin -1 tsp
Ginger- 1 tsp(minced)
Chat masala- 1\2 tsp
Curry leaves & coriander leaves
Salt to taste
Oil for frying
How i made:
1.Clean and soak sago in water minimum 30 mins to 6 hrs or overnight(refer notes)
2.Now the sago must has swelled well absorbing the water,drain the excess water completely.
3.Boil the potato and mash it well.
4.In a mixing bowl add the mashed potato,swelled sago,onion,green chilly,salt,ginger,
cumin seeds,chat masala ,curry leaves ,cilantro and mix well.
5.Heat oil,make small balls flatten on ur pan and fry them in oil.
Serve hot with ketchup.
This taste very good when it is hot.
Notes:
1.Some sago (small variety) needs just 30 mins for soaking but bigger one needs overnight to swell up.
2.You can add some coarsely powdered (roasted) peanuts to the mix and make vada to get crunchier effect.
3.You can even shallow fry these vadai,i made one batch deep fried and other shallow fry.both were good.
