Mixed Vegatable Khichdi


Today i come with an easy khichdi which can be made in 15min and it can be called as one pot meal.Yesterday for dinner i made this and it tasted awesome with coconut chutney,do try this easy one.



Ingredients:

Preparation time- 15 min, Serves-2


Sooji/Rava- 1 cup
Water- 2 cup + 1\4 cup
Mixed vegetable-carrot,beans,green peas
Onion-1
Green chilli-1 or 2
Ginger- small piece
Tomato-1
Turmeric powder- 1\2 tsp
Salt to taste
Oil

To temper

Mustard
channa dal
Cashew
Cilantro to garnish



Method:

1.Dry roast sooji/rava well.

2.Cut all veggies and keep ready.

3.Heat oil in a kadai,pop out mustard,channa dal,cashew, then add onion green chilli and ginger and saute little,followed by tomato and mix for a while.

4.Then add all your vegetables,add turmeric powder and salt needed and mix well,add 2 cup water + 1\4 cup for veggies and bring to boil.

5.Simmer the flame and add roasted rava/sooji little by little and stir continuously,mix carefully as lumps may form.



6.Mix well till all water evaporates and garnish with coriander leaves.

Serve hot with coconut chutney.It will be heavenly.
