Banana Choc chips Muffins | Eggless & Butterless


Anything with banana is my favourite and i even love the fruit banana as such. But my kids hate the fruit,i have to compel them to eat it due to my force they eat now and then.Then too there are time when i was left with some over ripped bananas in my pantry and when i see them the first thing that strike my thought is to bake with it.Last week when there were few over riped fruit  i made this muffin with added chocolate which is my son's favourite.


Preparation time: 10 mins
Baking time: 20-25 mins
Makes- 6 big muffins

Ingredients:
  • Wheat flour- 2\3 cup
  • flour-1\3 cup
  • Sugar-1\2 cup
  • oil-1\4 cup ( i used canola oil)
  • over ripped banana-3
  • Cocoa powder- 1 tbsp
  • baking powder-1 tsp
  • baking soda-1\2 tsp
  • curd/yogurt-1\3 cup
  • Choco chips-1 tbsp
  • vanilla essence- 1 tsp 


Method:

1.Sieve both flour with baking powder,baking soda and cocoa powder.Mash the banana well.

2.Add sugar to the mashed banana and mix well .then add in oil ,essence ,mix.


3.Slowly add the sieved flour in batches and mix well.Add in curd in between for easy mixing.

4.Lastly dunk in choco chips and just fold in.Line the muffin tray and fill the dough up to 3\4  height.

5.Bake it in a pre heated oven for 20-25 mins at 180 deg C till a tooth picker inserted comes out clean.


6.Cool it well and serve for tea/coffee or for breakfast.




Note;

1.Baking time may vary from oven to oven.
