Sambar powder is one of the most used powders in the south Indian kitchen. It is not alone used for sambar but can be added in vatha kuzhambu, stir-fries, and koottus. My mom always makes a fresh small batch of this powder every time she makes sambar. But I never make it and always go for a shortcut method with readymade sambar powder. Fresh sambar is so aromatic and tastes the best. So always make a small batch and use within a week.Let us see how to make this.

Ingredients:
Red chilly - 5-7 ( i used regular & Kashmiri chili)
Dhania/coriander seeds-1/3 cup
Methi/fenugreek seeds-1 tsp
Jeera-1 tsp
Channa dal/kadalai paruppu- 1 tbsp
Raw rice-1/2 tbsp
Method:
1. Dry roast each ingredient one by one till an aroma comes.
2. Cool and powder it in a mixer grinder.
Cool the powder and store.
Freshly prepared podi is always flavourful 👍
