Ingredients
- Flour 1 cup
- Oil- 1/3 cup
- Sugar- 1/2 cup
- Milk- 1/4 cup
- Essence-1 tsp
- Baking powder-1\2 tsp
- Dark chocolate compound
- Desiccated coconut
Method:
1.Mix oil and sugar well in a mixing bowl.Sieve flour with baking powder in it.Mix well by adding in milk.
2.Add in essence and make a dropping consistency batter.Pour into a preheated oven and bake for 15-20 mins or till done at 180 deg C.
3.Cool the cake well and cut into small squares.Meanwhile, melt some chopped chocolate in a microwave or by a double boiling method.Dip each square pieces in the melted chocolate.
4.Roll the chocolate coated pieces over a plate spread with desiccated coconut.Allow it to set.
Lamington is ready.
Note:
1.Baking time varies from oven to oven.
I've tasted lamington in Hamilton Australia and it was pretty awesome. The mixed taste of chocolate and shredded coconut plus the texture of the cake was amazing. It isn't that sweet at all cause it balances the taste.
