Yields: around 10 cookies
Ingredients:
- Flour-1&1\3 cup
- Baking powder-1 tsp
- Granulated sugar-1\2 cup, heaped (then powder it)
- Margarine-1\2 cup
- Milk-1 tbsp
- Cocoa powder-1 tbsp
- Vanilla essence-2 tsp
Method:
1.Cream margarine and powder sugar well in a mixing bowl.
2.Add in flour, baking and mix it up well.Add essence & milk and make a soft dough.
3.Divide the dough into two parts.To one part add cocoa powder and mix it up well.Cover both doughs and keep it refrigerated for some time.
4.Take out the doughs and shape it into a form of a log.Cut it into strips and arrange vanilla & cocoa dough one after other.
5.Make three rows of it and press them together to make a single log which looks like checkerboard log.Do the same for all strips.
6.Cut into pieces and arrange in a prepared baking tray with space between.
7.Bake it in a preheated oven at 180 deg C for 12-15 mins till it becomes little crisp in edges and soft in the centre.
8.Cool in on wire rack.It hardens as it gets cooled.Store in airtight container.
