If you have any extra curd fresh or slightly sour try to use it in your cakes as it yields soft and fluffy bakes.As My birthday was this week I just want to make a simple cake.My daughter one day said he was longing to a have brownie, so I decided to make this for my day with easy avaliable ingredients in my kitchen pantry.
I just kept it plain but you can decorate with ganache and drop srpinkles over it.Do try this its so easy to make.
Ingredients:
- Flour- 1 & 14 cup
- Cocoa powder- 1\3 cup
- Baking powder- 1& 1\2 tsp
- Oil-1\3 cup
- Yogurt-1\3 cup
- Sugar-1\2 cup
- Vanilla essence-2 tsp
- Mixed fruit jam -1 tbsp(optional)( to give deep colour)
- Milk -1 tbsp
- Chocolates(optional)
- Icing sugar for dusting on top
Method:
1.Powder the sugar in the mixer.
2.In a mxing bowl add oil,powder sugar and mix well.
3.Then add curd/yogurt,fruit jam, essence and whisk it well with a hand whisk.
4.Sieve flour,baking powder,cocoa powder over it.
5.Gently mix it in a direction by adding milk.Don't over mix it.
6.Pour the prepared batter in a greased-floured baking pan.Place some chocolates pieces over it.
7.Bake it in a pre heated over for 30-35 mins at 180 deg C or till done.
8.Cool ,dust icing sugar over it,cut and serve.
Note:
1.Baking time vary for oven to oven.
2.Adding chocolates in purely optional.Instead of it you can use walnuts or any nuts.
