Millets are in use quite long back but we forgot its benefits and nutritional values.After knowing it people have changed their attitute towards it and now you can see millet related products, books, package,etc are found in almost all departmental shops.
When it comes to cookies I have not baked any with this and hence last weel decided to do one with the little millet/samai which I had in my pantry.I mixed wheat flour & millet flour tegether to make this cookies but If you are allergic to gluten then avoid wheat flour and use all purpose flour.
Preparation time 10 mins
Baking time 18-15 mins
makes around 20 cookies
Ingredients:
- Millet flour- 1 cup
- wheat flour- 3\4 cup
- baking powder- 1 tsp
- vegetable shortening- 2\3 cup
- icing sugar- 1 & 1\3 cup
- vanilla essence- 1 tsp
- elachi powder-1\4 tsp
- milk- few tsp
- choco chips -1\3 cup ( optional)
Method:
1. In a bowl add in bothe flour,icing sugar,baking powder,spice powder and mix first.
2.Then add in shortening , essence and mix to resemble bread crumbs.Slowly add in milk and make a soft dough.Add in choco chips and fold in.
3.Scoop out the batter in form a ball over a lined baking tray and bake for 20-25 min in a pre heated oven at 180 deg C.
4.Cool on wire racks and store in air tight container.
Serve as snack for evening tea / coffee
Notes
1.Wheat flour can be replaced with APF/maida.
2.Choc chips is purely optional.
3.Add milk little by little.
Nice recipe .. will try out sometime. Never tasted millet cookies.
