Lemon Cupcakes with Chia Seeds | Lemon Cupcakes | Eggless cupcakes


When I got organic products from plattershare's , Belly Nirvana associate program of GoIndiaOrganic . the first thought that stuck was to bake.Since I had not done any lemony cake I decided to do a cupcake with chia seeds.These chia seeds look similar to sesame seeds and have a crunch effect when bitten.Rich in omega 3 fatty acids, fiber, and many essential nutrients it also helps in weight management.

Coming to this cupcakes there are too simple with just basic ingredients and the addition of this seeds to it gives the cake a nice crunching effect.I made it simple but you can be creative and experimenting other ingredients.

Preparation time: 10 mins
Baking time: 15-20 mins
makes; 6 cupcakes

Ingredients:

  • Flour- 1 cup
  • baking powder- 1 tsp
  • baking soda-1\2 tsp
  • sugar- 1\2 cup 
  • odourless oil-1\2 cup
  • chia seeds- 1 tbsp
  • lemon zest-from a lemon
  • lemon juice- 1 tbsp
  • lemon essence- 1 tsp ( optional)
  • milk-1\3 cup ( adjust)
Method;

1.Mix flour with baking powder & baking soda.

2.Add sugar & oil in a bowl.mix well.Add in lemon juice,zest,essence( if using) and mix up.Add chia seeds to it,mix.


3.Slowly add in flour and mix thoroughly .If difficult to mix add milk.


4.Transfer it to a muffin baking pan and bake it in a pre -heated oven at 180 deg C for 15-20 mins


Cool and serve.


You can dust icing sugar on top and serve.

Note;

1.Baking time may vary.

2.For easy demolding use cupcake liner.
