Nothing better than a sweet to begin this auspicious day and so here I am with an interesting pudding/payasam with a millet- Foxtail.
Millets are known for high dietary fiber and various essential nutrients which are very less in rice and wheat..Hence nutritionist/doctors are advising people to opt out rice and use millets. These grains do wonders for weight watcher and diabetic people.
Making this payasam is not a rocket science, just cook the millet add in sweetener and milk.In this recipe I have used ordinary milk but you can also use coconut milk.
Adding the milk in correct stage is important as the whole thing may curdle if milk is added for hot jaggery syrup, so be careful init.

Ingredients:
- Foxtail millet / Thinnai-1\4 cup
- jaggery -1\3 to 1\2 cup
- milk-1 cup
- Dry ginger powder/ chukku podi-1\2 tsp
- ghee- 2 tsp
- cashew & rasins-few
Method:
1.Dry roast the millet for a while.cool a bit,rinse in water well and cook in a large sauce pan with 1-2 cup of water till done.
2.Meanwhile boil milk and cool it.Measure jaggery and melt it with some water.
2.When the millet is cooked pass the jaggery syrup through a sieve in to it.Check.of sweetness and add if needed.Add ginger powder.Let the millet-jaggery mix boil for a while.swtich off and cool it.
4.When it reaches room temperature add the milk to it .Heat the mix in low flame for a while.
5.Ghee roast the raisins and cashew and add to it.Swtich off.
Serve hot/warm or chilled.
