Palak Pulao | Spinach Rice | Easy One Pot Meal

We all know greens are grat source of iron and this spinach/palak is  not an exemption loaded with nutrients and good factors .This nutrient dense food  is so versatile can be either eaten as raw in salads or in cooked dishes or soups.It is low calorie and high in vitamins,minerals and other nutrients.It is is the only green which is readily available  all over the world and is affordable by all.



 If I ask kids to eat green as stir fry they deny but when as rice/pulao they can't and we get that satisfaction of feeding them good food.Its very simple to make this pulao and not other side dish is needed for it,just an onion or any yogurt based raitha make a good pair.

Preparation time:10 mins
Cooking time: 15-20 mins
Serves: 3-4

Ingredients:
  • Basmati rice: 1& 1\2 cup
  • water-3 cups
  • Palak/spinach leaves-around 10
  • coriander leaves-2 stalk
  • Onion-1,finely  sliced
  • green chilly-2,slited
  • ginger garlic paste-1 tsp
  • turmeric powder-1\2 tsp
  • garam masala-1 tsp
  • salt to taste

To temper:
  • oil+ghee-2 tbsp
  • cashew-few
  • whole spices-cardamon 2 ,cloves  2 ,bay leaf-1 and cinnamon-1 stick

Method:

1.Clean the palak leaves and chop it.Heat a tsp of oil and saute these leaves till it shrunk a bit.Cool and grind it to fine pastes along with cleaned coriander leave.Clean the rice and soak for 10 mins.

2.Heat oil + ghee is a thick bottom pan.Add in whole spices and wait for its aroma to release.Then add in cashew nuts a,d saute followed by onion and green chilly.Saute till it become translucent.

3.Then add in ginger garlic paste and the ground mix and saute a bit.Drain the rice and into it along with salt,turmeric and garam masala powder.Fry the rice for a while.Add in water and check for salt,Add if needed.

4.Cover and cook till it is 3\4 cooked.Then keep the pan over a dosa tawa.In about 5-6 minutes it will be done.Switch off and fluff up with fork.

Serve hot with any raitha or as such.

Notes:

1.Since I am always comfortable cooking pulao in pan i made this way.You can also do the same in the pressure cook.In that case cook it for 3-4 whistle which ever is applicable to your cooker.

2.You can also other vegetables like peas,carrot ot both.But I preferred it to be plain palak.
