Beetroot Rice | Lunch Box Ideas | Rice Variety

Beetroot is one of the vegetable which can be eaten as raw or cooked.Rich in fibre and anti oxidants this helps to lower the blood pressure apart form this it reduces bad cholesterol,helps relieve fatigue,etc.This vegetables can be used by all age groups of people.My daughter loves this vegetable and i often make pachadi with it and sometimes just a stir fry which will tasty and easy.Packing lunch box for kids are quite challenging since it must be tasty,appealing and the child must finish it fully.Lasty week my daughter asked for this rice and i made it,both my kids liked it.Its so simple just make a stir fry  and mix the cooked rice in it.
Preparation time: 5 mins
cooking time: 10 mins ( excluding the time needed for cooking rice)

Ingredients:

  • Cooked rice
  • Beetroot-1 big
  • Oil- 2 tsp
  • mustard seeds-1\2 tsp
  • cashew-few
  • caraway/shahi jeera-1\4 tsp
  • green chilly-2,finely chopped
  • turmeric powder-1\2 tsp
  • salt to taste
  • coriander leaves-to garnish 



Method:

1.Cook rice and spread in plate and cool a bit.Peel and grate the beetroot.

2.Heat oil a pan pop out mustard seeds and shahi jeera( for extra flavor).Then add in chopped onion and green chilly.Saute till it becomes translucent.

3.Then add in grated beetroot,turmeric powder and salt.Saute till all the water content in the vegetables evaporates and it becomes little dry.Switch off.Add in coriander leaves.


4.Mix it with the cooked rice and pack for lunch box accomplish with some spicy side dish or colourful vadams.

Note:

1.When packing for kids you can even add a tsp of ghee while sauteing.
2.For extra flavour u can add some garam masala also.
