Merry Christmas.
Try this easy Christmas fruitcake. Soaking dry fruits in apple or orange juice for a non alcoholic version for a day or two is enough.I used orange juice for soaking. dry fruits used my me were raisins, sultanas, cherries, tutti fruity.
Ingredients
- Flour-1 &1\2 cup +1tbsp
- Baking powder-1 tsp
- Spice powder- 1 & 1\2 tsp
- egg-2
- Butter/oil-1\2 cup
- Sugar-1\2 cup
- Essence-1 tsp(optional)
- Mixed dry fruits-1 cup(soaked in orange juice)
For caramel:
- Sugar-1\4 cup
- Water-1\2 cup
Method:
For caramel:
1.Heat 1\4 cup sugar when it gets caramelized add 1\2 cup water.
2.Cool it.
For cake:
1.Soak mixed dry fruits in orange juice for 1-2 days.
2.Add a tbsp of flour to the soaked fruit and mix it.
3.Sieve flour with baking powder & spice mix.
4.Cream butter & sugar.
5.Add in flour mix and caramel side by side.Add essence if using
6.Lastly, fold in soaked dry fruits and fold it.
7.Scoop into baking pan and bake it in a pre-heated oven at 180deg C for 35-40 mins
Lovely bake that one is... love that it is baked in small muffins, easy to give away!
