Pina-colade cupcake-eggless | For Eggless Baking Group


Pina colade is a sweet rum-based cocktail made with rum,coconut cream and pineapple juice.It had been the official beverage of Puerto Rico since 1978.For October month Meena  of Chettinad fiesta suggested this pina colade cake for the eggless baking group.First i thought of skipping off then decided to do cupcakes of it.Actual frosting must be coconut cream cheese frosting i replaced it with whipped cream frosting.



Ingredients:

(Makes 4 cupcakes)


  • Flour-1\2 cup
  • oil-1\4 cup
  • yogurt-1\4 cup
  • Granulated sugar-1\4 cup
  • Pineapple pieces-1\3 cup
  • Baking powder-1\2 tsp
  • baking soda-1\4 tsp


For frosting:

Whipped cream
Dessicated or fresh coconut-for topping.






How i made:

1.First ground the pineapple pieces in a mixer.Transfer it to a bowl.Add sugar to it and allow it to boil fro 2-3 mins till sugar dissolve and become little thick.

2.Sieve flour with baking powder and baking soda.

3.In a mixing bowl add oil and yogurt and mix well.Add the pineapple-sugar mix to it and mix well.



4.Add the dry ingredients to it and gently fold in.

5.Pour the batter in muffin pan and bake it in a pre-heated oven for 15 mins at 180 deg C or till a tooth inserted comes out clear.(mine took 15mins only).



6.Cool it and frost it with cream,top it with dessicated coconut.(if using fresh grated coconut,dry roast it in pan till all moist evaporates).


The cup cake was soo soft.
